I would think that you would want an organic orange or to at least shave the outermost peel off.

We're experimenting with something that might be mead-like. Basically it's water that has had oatmeal and sage soaking in it, poured into a rum bottle that had been used to breed beer yeast, then added a good amount of honey.

It is a good idea - I use something like a tablespoon of bleach per litre of water - soak everything in that and then rinse thoroughly.

So a year later and I wouldn't call the stuff enjoyable. Thinking back it was probably too warm for lager yeast - someone I talked to suspects the alcohol taste comes from fusel - which yeast make more of when it's too warm.

This year I'm going to wait until it's less than 15C outside before I start.

Excellent posting from all! I got hooked on the idea of honey mead over a year ago when a friend brought some from a brew master. I have done a lot of research and tried this very recipe I got from "stormthecastle" which is another great resource for information. The idea of making your own beverage is pretty satisfying. I've also done a fusion technique from storm the castle where you take a bottle of white wine and fuse it with honey, clove, nutmeg, and spices. All is coming along wonderfully (fusing is "cheating") but it gives a great taste and for someone who isn't sure if they like honey mead it is a great way to find out. Good luck to all.
